Combined restaurant, cookery school and shop planned for York

It began as a pop-up lunch restaurant inside a York art gallery, before moving into Spark.

But now Cardamom & Dill is planning to open in its own permanent home on Gillygate.

Specialising in the flavours of the Mediterranean, the business is aiming to open a flexible space in the building that was formerly home to the York Makery.

And it will be about all things vegetarian, from a restaurant to a cookery school to a shop, according to plans.

There will also be a supper club operating in the evenings.

Cardamom and Dill began in September 2017 as a pop-up residency delivering a lunch service at the School House Gallery on Peasholme Green in York.

Offering a mixed vegetarian and vegan menu, it ran from Thursday to Sunday every week.

Soon afterwards the business launched a supper club concept that, planning documents say, “is still selling out at least two months in advance with a long waiting list”.

The documents continue:

  • The first of its kind in York, these events deliver a Mediterranean-inspired three-course menu based upon a different country each month.

    All the menus are as authentic as they can be using ingredients sourced from the countries that inspired it.


Last November Cardamom and Dill moved to a unit in Spark:York on Piccadilly. This has seven tables and can seat 14.

But now they want a permanent home. Plans for the Gillygate shop show a takeaway coffee and bakery retail space at the front, with a kitchen further back.

The rear yard would be used for workshops and events, and as an eating area in good weather.

Proposed opening hours are Tuesday to Saturday from 9am-6pm. This could extend to 9.30pm “to accommodate the supper club and taverna evenings”.
